First Course

Olive Relish-Cato
Ingredients: green olives, black olives, white wine vinegar, olive oil, fennel, coriander, mint
Carrot Paste-Al-Andalus
Ingredients: carrots, honey, sugar, ginger, galingale, cubeb, clove
Bacon Jam
Ingredients: bacon, yellow onion, garlic, coffee, cider vinegar, maple syrup, brown sugar, honey, allspice, chili powder
Apple Slaw
Ingredients: apples, apple cider vinegar, maple syrup, Chinese five spice
Eggs
Baguette
Ingredients: flour, yeast, honey, salt, oil

Second Course

Roast Chicken with pears, bacon, and onions
Herb Tourte-Scappi
Ingredients: chard, spinach, mint, marjoram, ricotta, parmesan, asiago, butter, cinnamon, salt, pepper, eggs, sugar
Roasted Root Vegetables
Ingredients: cauliflower, Brussel sprouts, carrots, parsnips, red onions, garlic
Bacon and Cheddar Biscuits
Ingredients: bacon, wheat flour, brown sugar, pepper, butter, cheddar cheese, buttermilk

Third Course

Pork Roast stuffed with Bacon and Figs
Ingredients: Brine: honey, salt, bay leaves, garlic, fennel seeds, pepper
Stuffing for Pork: bacon, onion, figs, sugar, brown sugar, balsamic, bay leaf salt, pepper, bread crumbs, parsley
Lentils
Ingredients: lentils, onions, garlic, carrots, celery, garlic, salt pepper
Quinoa with almonds and herbs
Ingredients: quinoa, almonds, shallot, oil, vegetable stock, sage, chives, parsley, salt and pepper
Mediterranean Salad- Salad greens with Dressing
Dressing: olive oil, red wine vinegar, sugar, oregano, basil, season salt, onion powder, minced garlic, Dijon mustard, parmesan cheese, pepper

Fourth Course

Berry Custard Tart
Ingredients: cream, sweet red wine, milk, eggs, dates, honey, saffron, ginger, mace, cloves, berries (whatever I find in season at time), pie shells
